The Greenway Hotel & Spa has always been popular with royalty, so it will come as no surprise that our Head Chef also has the royal seal of approval, having cooked for the Queen on several occasions.
Robin Dudley started his career in humble surroundings as a kitchen porter in a small restaurant local to his home town. Before long he went from washing dishes to making bread, then simple starters and desserts. After initially training as a pastry chef, Robin has gone from strength to strength, working in various highly regarded establishments, twice achieving two coveted AA Rosettes.
Robin describes his dishes as ‘modern French, with British influences’ and prides himself on using local, seasonal produce. Robin’s gastronomic ideals, together with his culinary skill and flair, produce exciting and innovative menus that continually delight his many customers.
